West Country Fondue (Original recipe)

West Country Fondue recipe, as promised to dwg a long time ago:

1/2 small onion, cut
1 1/4 cups dry cider
1 teaspoon lemon juice
500 g (1 lb) Cheddar cheese, grated
1 Tablespoon cornflour
2 Tablespoons sherry
pinch of dry mustard
1 teaspoon Worcestershire sauce
French bread cubes to serve

Rub the inside of a flameproof dish with the cut side of the onion. Add the cider and lemon juice and heat until bubbling. Gradually stir in the cheese and heat gently, stirring, until it melts and begins to cook.

Blend the cornflour with the sherry and add the mustard, Worcestershire sauce and pepper to taste. Add to the cheese and continue to heat, stirring, for 2 to 3 minutes until the mixture is thick and creamy.

Serve immediately, with the bread cubes.

Serves 6.
